  • Immersion blender or blender

Ingredients

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 head broccoli, chopped

  • 1 zucchini, chopped

  • 1 cup spinach

  • 1 cup kale

  • 4 cups vegetable broth

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup fresh mint, chopped

Instructions

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 3-4 minutes, or until softened.

Add the broccoli and zucchini to the pot and cook for another 3-4 minutes, stirring occasionally.

Add the spinach, kale, vegetable broth, salt, and black pepper to the pot. Bring the soup to a simmer and cook for 10-15 minutes, or until the vegetables are tender.

Remove the pot from the heat and use an immersion blender or transfer the soup to a blender to puree until smooth.

Stir in the parsley, cilantro, and mint.

Notes

This soup can be stored in an airtight container in the refrigerator for up to 3 days. You can use any combination of greens you like in this recipe. For a creamier soup, you can add a can of coconut milk or cashew cream.
