Ingredients

  • 2 large sweet potatoes, peeled and cubed

  • 1/2 cup bread crumbs

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon paprika

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons olive oil

Instructions

Boil the sweet potatoes in a large pot of salted water until tender, about 15 minutes.

Drain the sweet potatoes and transfer them to a large mixing bowl. Use a potato masher or fork to mash them until smooth.

Add the bread crumbs, garlic powder, paprika, salt, and black pepper to the mashed sweet potatoes. Mix well until fully combined.

Form the sweet potato mixture into patties, using about 1/4 cup of the mixture for each patty.

Notes

To make these sweet potato cakes vegan, use vegan bread crumbs and substitute the olive oil with vegetable oil. For a gluten-free version, use gluten-free bread crumbs instead.
