Ingredients

  • 1 cup almonds

  • 1/2 cup pumpkin seeds

  • 1/2 cup dried apricots

  • 1/2 cup raisins

  • 2 tablespoons chia seeds

  • 2 tablespoons hemp seeds

  • 2 tablespoons maple syrup

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1/4 cup unsweetened shredded coconut, for coating

Instructions

In a food processor, pulse the almonds and pumpkin seeds until finely chopped.

Add the dried apricots, raisins, chia seeds, hemp seeds, maple syrup, vanilla extract, and cinnamon to the food processor. Pulse until the mixture comes together and forms a sticky dough.

Using your hands, roll the mixture into small balls.

Spread the shredded coconut on a baking sheet.

Roll each energy bite in the shredded coconut until fully coated.

Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes before serving.

Notes

You can use any combination of nuts and dried fruits that you like. If you don't have a food processor, you can chop the nuts and fruits finely with a knife. Make sure to store the energy bites in an airtight container in the refrigerator.
