Equipment

Ingredients

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 1 tablespoon ground turmeric

  • 1 cup red lentils

  • 4 cups vegetable broth

  • Salt and pepper to taste

  • Lemon wedges and fresh cilantro for serving (optional)

Instructions

Heat the olive oil in a large soup pot over medium heat.

Add the chopped onion and garlic and cook for 2-3 minutes until fragrant.

Add the chopped carrots and celery to the pot and cook for an additional 5 minutes.

Add the ground turmeric to the pot and stir to coat the vegetables.

Add the red lentils and vegetable broth to the pot and bring to a boil.

Reduce the heat to low and let the soup simmer for 25-30 minutes, or until the lentils are tender.

Season the soup with salt and pepper to taste.

If desired, use an immersion blender to blend the soup until smooth.

Serve the soup hot with lemon wedges and fresh cilantro on top.

Notes

Rinse the lentils well before using to remove any debris. Use a vegetable broth or stock that is low in sodium to control the salt level in the soup. The soup can be blended using an immersion blender for a smoother consistency, or left chunky.
